Red Beans and Rice
Ingredients:
- Add olive oil in Dutch Oven
- Add 2 small onions or 1 large onion, chopped finely
- Add 1 celery stalk, cut finely
- Add 2 cloves of garlic (no need to cut)
- Add 1/4 of a green pepper
Cook until soft
Add
- Add one pack of red or white beans
- Add pickeled meat or ham or sausage cut in cubes into sauce
- Add 7 or 8 cups water
- Add 1 bay leaf
- Add parsley, salt and pepper to taste
Bring to boil, then lower fire
Simmer for an unknown time until beans are soft. Smash some beans against side
of pot to thicken sauce. Continue cooking until done.
Beans are best if served the next day. This allows sauce to thicken. Make
rice on the date you plan to eat. This dinner can be frozen for later use.
