Chicken w/apples and raisins
Ingredients:
- 1/4 cup low fat mayo
- 1 teaspoon curry or cajun spices
- 2 teaspoons water
- 1 large chopped boneless skinless cooked chicken breast
- 1 small chopped apple (Braeburn if available)
- 1/3 cup diced celery
- 3 tablespoons raisins
- salt and pepper to taste
Combine mayo, spice and water in small bowl and stir until well blended. Add the chicken, apple, celery and raisin and stir till well blended.
Cover and chill, makes about 2 cups, 2 servings.
Calories 222, 5.5 grams fat, 27 grams carbs and 17 grams protein.
