Rum or Bourbon Balls

Bourbon Balls - makes about 30 balls Bourbon Balls w/ Chocolate - makes about 50 balls
1 box vanilla wafers 1 1/4 pound of Oreo type cookies
1 cup powdered sugar 1 pound graham crackers
1 cup walnuts or pecans 2 cups chopped pecans
1 1/2 tablespoon light corn syrup 15 ounces, semi-sweet chocolate
1/4 cup bourbon or rum 1/3 cup light corn syrup
powdered sugar for rolling 1 cup Bourbon (preferred) or Rum
Grind the cookies in food processor and add to large bowl

Add the remaining ingredients and mix thoroughly.

1/4 cup Grand Manier or Amaretto
  Confectioners sugar for rolling
 

Grind all cookies in food processor and add to large bowl.

Melt the chocolate, then add corn syrup and booze. Stir until smooth.

Add chocolate mixture to cookie crumbs and mix thoroughly.

Roll balls about 1 inch in size and roll in powdered sugar. Place in tin and allow to sit overnight before serving.

If properly kept in airtight containers and kept in dark environment, they will keep up to one year.
