Rice and Broccoli Casserole


Boil rice until tender. Drain well and set aside. Melt margarine in skillet and then saute shallots. Add defrosted broccoli and simmer for about 10 minutes. Add the can of soup and simmer for 10 more minutes. Stir the cooked rice into the broccoli mixture and salt and pepper to taste (be careful with salt, as cheese is already salty).

Pour into a 9 by 13 baking dish and top with shredded cheese. Bake at 350 degrees covered for 15 minutes and another 15 minutes uncovered.

Brown under broiler for about 1 or 2 minutes if desired.
