Heat oven to 425 degrees. Combine eggs, flour, milk, salt and nutmeg in a medium bowl; whisk intil combined. Batter may still be slightly lumpy.
For each pancake, melt 1 tablespoon butter in a 4 to 6 inch skillet over medium high heat. Pour batter into skillet to cover the entire bottom with a thin pancake. Immediately place skillet into oven. Bake until golden brown, about 10 minutes.
Dust with confectioners sugar and serve immediately. Add your favorite jam for variety.
