This marinate is for 10 to 15 pounds of jerky. Cut meat as thinly as possible, no more than 1/4 inch.
Mix all ingredients in bowl. Place meat of one roast at time in bowl. Allow to soak while you are cutting up another roast. Transfer to another bowl when 2nd roast is sliced. Repeat process until all meat is cut. All meat should be in one container. Transfer any liquid to 2nd container and marinate meat overnight.
Start coals in smoker and place meat on racks. After one hour check fire and add charcoal if necessary. Check fire every 30 minutes after that.
Beef Jerky should be done after 3 to 4 hours.
