Italian Festival Sausage


Sauté bite size pieces of sausage in little olive oil, add water if necessary to keep moist, remove with slotted spoon and drain on paper towel. In the drippings in the same pan sauté bell peppers, onions and celery (cut in chunks) till they are tender, add wedges of tomatoes and slices of garlic, sauté a little longer, add sliced mushrooms, seasoning, salt, black pepper and parmesan cheese to taste. Add sausage and simmer about 5 minutes.
