Signature Dish Mushroom Cloud Soup


In a large mixing bowl, microwave safe, heat the butter to melt it. Add the mushrooms, onion and parsley and microwave for 3 minutes. Stir and then microwave for 2 more minutes. Stir in the flour and 1/2 cup of the beef broth, microwave for 1 to 2 minutes or until bubbly.

Pour half of this mixture in blender and add half of the sour cream and half of the remaining beef broth. Puree the mixture. Repeat for the remaining mixture.

Return to heat to reheat soup. Serve with mushroom slices floating on top of soup.
