Cook elbow noodles as per package instructions with salt.

Warm the milk, not hot but warm in aother pot.

In another pot, add a little oil to coat the bottom of the pot and cook the cut up tasso until grizzled. Remove the tasso and set aside.

Add butter and flour and cook over medium fire.It will come to a paste type real quick. When it does, add a cup of the warm milk and stir until paste forms again. Continue until the all milk is added. This is a Bechamel sauce.

Add the cheese to the milk mixture in small chuncks until the cheese melts and at anytime, add the remaining spices and cooked tasso to the Bechamel sauce and cheese.

when the noodles are finished and drained, return the noodles to the pot and add the Bechamel & cheese mixture to the noodles.
