Enchilada's


Brown the ground meat in a skillet and then drain and rinse with water in colander. Crumble any big pieces into small pieces. After drained, put meat back into skillet. Add package taco seasoning, water (not too much - don't want it watery) and cook until blended.

Spray 10 x 8 rectangle Pyrex or stainless steel dish with PAM.

Take a flour tortilla and add meat in center, 3 Tablespoons scoops of enchilada sauce, some onion and cheese. Wrap as tight as possible and place in dish to cook. Continue until dish is full. Pour remaining sauce, onion and cheese on top.

At this point, you can freeze the dish, store in refrigerator for another day or put in 350 degree oven to cook for 30 minutes.
