Lemon Ice Box Pie

Smash all but 25 vanilla wafers in processor, until small pieces. Mix in 1 tablespoon sugar and then the melted butter. This mixture should stick together, if not add more butter. Butter pie pan and press cookie mixture into pie pan. Use the remaining cookies around the edge of the pie pan and mold the cookie crumb mixture to these cookies. Set aside.

In a separate bowl, whisk the egg whites until fluffy.

Add the condensed milk to mixing bowl and then add the lemon juice and the egg yolks. Mix well. Fold the egg whites into this bowl and fold the mixtures together until thoroughly incorporated together. Pour this mixture over the pie pan and add a few cookies in center for decoration.

Store in regrigerator until chilled and set, about 3 hours.
