Apple Tarte Tartin

Place dry ingredients into mixing bowl and using pastry cutter, "cut in" the butter until coarse. Drizzle ice water onto mixture and using a wooden spoon, stir to bring the dough together. Dough should not be crumbly, it should hold together when squeezed.

Being careful to not overhandle, cut into 2 pieces and wrap in plastic wrap. Chill at least 45 minutes or over night.

Pre heat oven to 375 degrees

Combine sugar and water in a 8 to 9 inch black cast iron skillet. and bring to a boil, lower the heat and continue cooking until mixture starts to turn a golden amber color. Remove from heat and add butter. Arrange the apple spices, cut sides up, around the pan until fruit is even with the sides.

Roll the pastry to about the size of the skillet and then lay pastry on top of the skillet. This will be the bottom when finished.

Bake for 20 minutes or until pastry is golden brown then let cool for about 20 minutes. Loosen pastry from skillet and invert onto serving platter
