Mix 1 cup of sugar and 3/4 cup of stick shortening (comes in 1 cup packages). Mix until sugar is blended with shortening. Mix 2 eggs in separate bowl until smooth and add to sugar and shortening mixture. Blend together until all lumps are gone.
In separate bowl, add 1 cup flour, 1 teaspoon of baking powder, add 1/2 teaspoon salt, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg. Mix well and add to first bowl. Blend together.
Add 1/3 cup milk and mix together
Add 3 cups uncooked oatmeal and blend together.
Add 1/2 cup raisins, 1/2 cup crushed pecans and 1/4 cup of dates. About this time you should find that the mixture is too hard to blend with a spoon. You need to start blending with your hands.
Let this batter sit for a few hours to allow time for the moisture to soak into the oatmeal and dry up a little bit.
Pre-heat oven to 375 degrees. Put wax paper on cookie sheets. Spoon a heaping portion of the batter on the cookie sheet and place in oven. After about 9 minutes, start watching the cookie. When just the outer portion of the cookie starts to turn brown, remove from oven.
Only put one cookie sheet in the oven at one time. Allow the cookies a little time to cool before removing from cookie sheet. Repeat until all batter is cooked. You can reuse the cookie sheet with the wax paper. This recipe should make about 50 cookies.
