Italian Spumoni Christmas Cookies

Ingredients:
• 2 cups plus 2 tablespoons AP flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1 1/2 sticks unsalted butter, melted
• 1/2 cup sugar
• 1 cup light brown sugar
• 1 large egg, plus 1 large eggyolk
• 1 teaspoon almond extract
• 1 teaspoon vanilla extract
• 1 cup semi sweet chocolate chips
• 1 cup chopped pistacchios
• 1/2 cup dried cherries

Preheat oven to 325 degrees.Line 2 baking sheets with parchment paper.

Mix the flour, baking powder and salt in a small bowl and set aside.

In a mixer bowl wiht the paddle attachment whisk the butter, brown sugar and sugar until combined. Add in the whole egg, egg yolk and both extracts. Mix until incorporated.

Slowly fold the flour mixture into the sugar egg mixture with a rubber spatchula until even. Fold in the chocolate chips, pistacchios and cherries.

Roll dough into 1 to 1 1/2 inch balls and flatten on top. Bake for 20 minutes and rotate sheets half way thru.
